Most Arab rice dishes add sauteed onions on top.
If it gets fancy, they add some sultanas or other types of raisins cooked with the rice. It is a Persian/Indian influence though. Persians use a specific type of raisins that is small and very sour. They also add tons of butter to their rice.

Cashews and nuts are also common in Indian rice dishes.

Ive seen pomegranate in some Caucasian (mountains) dishes as well. Thats a little hard to imagine because of how strongly sweet and tart pomegranates are. But i havent tried it.
