It makes a huge difference when a waiter at a decent steakhouse is present when they're needed and most importantly absent when not needed and is more attractive, well-spoken, and friendly without being fake or overbearing. As a straight 30-year-old, my best waiters have all been clean-cut, attractive, and confident younger men - as opposed to a struggling older single mother with smoker's rasp and a chip on her shoulder.

You are completely wrong. There's only like 4 states in America with any Michelin stars at all. Any fine dining, with or without the precious tire award, you are going to have to have some degree of professionalism in your demeanor and you will be asked interview questions only a professional server would know how to answer. Mostly questions about wine, proper etiquette, silverware placement, etc.
How many times have you gone to Applebee's and seen a server accurately remember a five course meal for a 5 top table without writing it down? Close to zero I'm sure.
