Is there a particular condition you're looking to treat that you're trying to remove low pH foods? Because not only are most foods slightly acidic to begin with (high pH foods are generally bitter), if you're otherwise healthy, the pH of the food is pretty much unimportant (consider that your stomach literally soaks everything in acid) and avoiding low pH removes a lot of things that have significant health benefits from the table such as most fruits and vegetables.

The only thing an ommelettelelette needs is corn starch slurry. in a cup or small bowl mix 1 tablespoon cornstarch and exactly the same amount of water. It's easier if you move the water towards the powder in the cup and agitate with a spoon. Then in a separate cup mix your eggs. Then combine slurry into the egg cup. Then fry in a little amount of oil. Fluffier than dairy and a better Maillard reaction on the omellettelelette's crust.
