For meat and paneer dishes in wet dishes, I guess you're just supposed to focus on the chunks of food with the rice/bread, and not worry about the left over sauces? An Indian coworker once gave me weird looks when I stocked up on naan and rice to polish off the saucier items. Straight up said, "what are you eating all that gravy for, man?" Of course, he was a bit of an odd guy, so I remained skeptical of his musings on dining etiquette.
