When did you realize that the difference in fat between chicken breasts and thighs is unbelievably inconsequential to your health (as long as the rest of your diet is okay)?

I like to use chicken thighs but I can't surpass chicken breast in the savory dishes I make. I mean I get it if you just don't like chicken breast. Probably you don't know how to cook with them and need to make richer, heartier, or more flavorful dishes.

I make a lot of variations of chicken soup/stew and almost always start with a lot of aromatics sweated in butter with a lot of herbs. Chicken thighs become bitter in this and brings the flavor down. So I'll sear the chicken breast and then after idk 30 mins or so remove it, let it cool, shred it, and finish it in the broth for another 15 or so. Again this is a very buttery aromatic base with a pile of herbs or spices on top of it. So the perfectly cooked that I shredded into large chunks soaks all of this into its texture. Then you get delicious large white meat pieces of very flavorful chicken.

I like chicken thighs too I'm just saying there's a better way to cook with the titties and if you don't like them you just might be doing it wrong.

I never eat chicken breast, my mom thought it was bland and I never ate it as a kid.
About 3 years ago I decided that I was going to learn how to cook chicken breast perfectly and after about 14 tries I did become good at it with a thermometer but I just found the flavour to be bland and so stopped.
I basically only ever eat bone in meat these days and I don't care about the health differences, I've always been a healthy weight (20-23 bmi).

This. I love chicken thighs but they're not good for everything. You really have to cook them long so they aren't gummy and slimy anymore. Chicken breasts are better for things like cutlets, sandwiches, schnitzel, chicken salad etc. I only use thighs on the grill, in stews or soups.

Basically synonymous with a milanesa. The ideal cuts of meat for a schnitzel is lean and quick cooking, like pork tenderloin, chicken breast, or veal chops. Chicken thigh needs longer, slower cooking or else it's chewy or slimy.
