I grew my own eggplants last year and my opinion was completely chanfed. I fried slices of them in some butter with chili flakes.

Usually eggplant just absorbs flavor and doesn't have much of its own. My homegrown eggplants had a lot of wonderful flavor.

Also chinese eggplants dishes are best eggplant dishes.

Anytime I want to order green curry from a thai restaurant and it has eggplant I end up getting the panang instead. Tried it twice with eggplant it just does not grow on me I hate that shit.

You’ve never had maqluba? The fried eggplant adds quite a lot to the dish. Also easy to make if you have a Dutch oven and the spices.
