Chinese in laws have kept soup out for a week. They cover when not getting some out and reheat to boiling everyday to kill anything that might be starting to grow.

I always try to put things away after the meal is done because I can't guarantee I'll be eating that same thing within a reasonable amount of time.

it is ONE FUCKING NIGHT. He could put it on the heater without the lid and it would still be fine.
One night is nothing, the food is then cooked again so what ever was just starting to grow in there will be gone again. And for large amount of toxin producing it's not enough time.
Only physical effects may occurr, for example freshly mashed potatos don't like standing overnight, the mixture breaks, the water comes out again and the whole thing sinks into a puddle. Other than that it's fine. I've always kept leftovers I knew I would eat the next day just there on the stove or in the oven, don't be such a pussy.
