Mustard powder or dijon. Lemon works fine, but vinegar is easier to standardize a recipe because lemons have different acidity lemon to lemon.

Apparently a dash of heavy cream is great in mayo.

Walnut oil makes great mayo. Any oil with flavor will have that flavor amplified when mayo-ified.

southern brands of mayo will have a distinctive flavor of apple cider vinegar

You should use a tasty acid, from sherry vinegar, fresh lemon juice, to your blend of each. The oil is the same, you should use a flavor you like. Remember most purchased mayo is for profit, so the cheapest neutral oil, and even the ones that say olive oil, it'll be a small portion.
