Made Mac and Cheese tonight
- Red Leicester cheese
- Salt, pepper, paprika, and a bit of English mustard in the sauce
- Chorizo and red pepper mixed in
- Spicy cheddar on the top
It turned out very very nice. Perhaps the best pasta dish I have ever made.

A bechamel should not split. Either you didn't cook it long enough on the stove before adding the cheese, you used too little flour, you used low fat milk, you used too much cheese or the wrong type of cheese, like one that's too mature, or you overbaked it or baked it at too high of a temperature.

It definitely did split though, bechamel is made by mixing fat with flour. The extra fat from his chorizo shouldn't make the sauce greasy since it should emulsify into the sauce if it was done correctly. His problem was clearly that he baked it in the oven and didn't just brown it under the broiler. Baked recipes typically use eggs or evaporated milk to prevent splitting.

Just look at it, it's swimming with grease, you can see grease pockets all around the edges and that's only one side, also the pools floating to the top, just imagine what the other sides look like and the inside. Also the sheen the whole thing has, that's from grease. Mac & Cheese should look like this, and have a completely emulsified sauce. There should be zero grease. OPs problem was probably that he baked it, without using a recipe for baked mac, which contains things like egg to stop this happening. He should have just broiled it.
