i like that he goes and interacts with like, big ballers in the field. like when he did the brown stock with the michelin star chefs, and the same with the fried rice.

it's one thing to be like "this recipe, wow it's really good" but it's another to go talk a proper top level chef about how they do it, and then have them try the recipe he made.
and i like how he puts a lot of work into the process. building a dry aging machine, building a dough roller for croissants.

I tried one of his bread/pierogi recipes and the video, recipe, and video description defined the measurements all differently, and they all added/omitted ingredients. The measurements lead to a ridiculously dry dough, and I had to find another recipe that used about twice as much liquid as the most liberal of his video/description/website recipe.

Gosh his content was so bearable before he blew up. Made prime rib the other night and looked at Chef Johns method and his method. Needless to say his method had like a whole extra pointless step for arguably the same result only to get rid of the "gray" on the outermost edge of the prime rib.
