What's your favourite recipes from him, anons?

I've cooked a lot of Chef John recipies and only 2 have been misses: florentine cookies because I used gluten free flour since my mom claims she can't eat gluten and pasta alla genovese, where the sauce somehow tasted ok on its own but was absolutely terrible with pasta.

i like that he goes and interacts with like, big ballers in the field. like when he did the brown stock with the michelin star chefs, and the same with the fried rice.

it's one thing to be like "this recipe, wow it's really good" but it's another to go talk a proper top level chef about how they do it, and then have them try the recipe he made.
and i like how he puts a lot of work into the process. building a dry aging machine, building a dough roller for croissants.
he's ALMOST unpleasant sometimes, but he's got a good PMA vibe and is really respectful to talented chefs the talks to.

This guy is proper S-Tier. Only thing I dislike about his videos is him sometimes skipping exact amounts of the ingredients used (especially fluids). Recipes are fantastic though, and if you go to his website you can usually find the exact numbers there.

He stopped making videos a year ago for whatever reason, which is a shame.
