Chorizo or bacon works well, the potatoes soak up all the fat leftover, I over cooked my potatoes. When I don't I usually fry them up in the remaining fat and brown them. If I'm making a meatless frittata I'll fry the potatoes up in some butter. You can use raw baby spinach instead of chopping and blanching adult spinach.

The dark red stuff was dried tomatoes . I lightly sautéed the mushrooms and green onions and mixed in the tomato afterwards . They tasted good but now that you said chilli i kinda wish I added some Anaheim pepper .
