I assume you're using the same technique overall at home as you are at the work.
Emulsion stinks at colder temps. I always nuke my oil up to around 90-100 °F before the slow pour. Egg should be roomish-temp at best.

Any technique that aerates the mixture vigorously as you add the oil is suitable. I just crank the standmixer on high with the whisk attachment, but I know that may not be available to everyone.

My brother and I used to be a picky eaters as kids but my mom cured us with a simple trick that you can use. Just serve the same stuff you're eating to your kids. If they don't like it tell em to get bent, don't make them a sandwich or anything. But don't force them to eat it either.
