Why is Mexico the only cuisine in the Americas that has good street food? Every other latin american has street food but it's mediocre.

The places I've been is to ecuador, peru and chile
Ecuador had ceviche, guatita, lots of fried pork, encebollado and cheese turnovers. Peru had ceviche, cow heart skewers, potato with a pepper sauce, doughnuts, pork sandwiches and mediocre stews. chile was probably the worst. hotdogs, turnovers and hotdogs and fries

Dafuq? Euro here. Our streetfood the whole continent over is generally fairly boring. My country does the same roast chicken sort of thing as I had in Ecuador and that's good but otherwise, it's mostly just waffles, corn, chestnuts, ice cream and fucking hot dogs EVERYWHERE. We also have meat salad stalls and meat sandwich stalls, too, but not much else. Unless you're including businesses in physical buildings as "street food," ours ain't shit.

that shit is bland as hell if it were not for the salsas
unfortunately, most mexican food is getting lamer by the day, since anybody who thinks making a taco thinks is already a chef around here but and sets up their own stand but they suck. This is due to different factors, one being is that most of our meat comes from the u.s.a. We get sent the worst kind of meat. All refrigerated for who knows how long and does not even at anything. I remember when pork smelt like pork and when beef smelt like beef. Now is just stala and insipid. I have to order my meat from a rural area from Veracruz and shipped it through DHL. Also, right now we are going through a crisis where we cannot buy fresh lemons unless paying $5 dollars per kilo and that is alot for a mexican household. Even the chicken here is expensive and fully hormoned and it is at the same price as beef and pork. And don't try to buy goat, that shit is really expensive at the restaurants. So ingredients are a thing, hence the low quality of street food in many states. And there are even full states where the best food is KFC ( jalisco ).

Regulatory bullshit, the only way you can sell street food in America and Canada you have to get a license, and even then, vendor carts are usually limited to only a couple thousand per city.
