I have mixed feelings on him. I can't deny him the respect he deserves for immersing himself in different cultures around the world to understand their dishes so he can make them accurate and delicious, but at the same time, he can be really pretentious and full of shit, and as renowned as he is, he gets things wrong. He still pushes the "sear it to lock in the moisture" myth for example. Meat doesn't work like that at all. Searing is for flavor and texture, it does nothing for moisture.

Putting diced onion in the patty is stupid because they're too big to soften before the meat turns into a puck.
The buns look hard and dry.
The toppings - onions, tomato, etc - are sliced unpalatably thick.
