Normal fish fragrant aubergines are also great, but I can't always bother to get out oil and do a deep fry. This version uses steamed eggplants and is thus much easier to cook, while still tasting amazing.

Don't limit yourself to the international channel. The chinese one has so much more great content and every video has hand typed (not auto generated) subtitles, so you can watch it even if you dont understand chinese. Not sure what the rationale behind the international channel is honestly, except to filter out the exotic animals and the more cultural stuff he uploads sometimes that he might think doesn't suit a western audience.
