i do think that with

depends on what each individual brewer has in mind mate. it's a broad category
i just know i like sour and funky-yeasty-fruity-heady-malty. some red ales remind me of a fermenting chilli mash before it's blended into a hot sauce
let's talk about beans next. personally i am a big fan of chickpeas, borlotti beans, and unhulled lentils. not american so not as many red beans around me

I made a version of gladiator puls the other day after watching that tasting history video on the subject. It's actually really fucking good, like eating italian-flavored refried rice and beans from 2000 years ago. Only it's fava/lima beans instead of pinto beans, and barley instead of rice. But it's the same basic architecture and I can totally see how you'd fill up on that shit forever.

yeah! i should try recreating ancient puls someday. i remember seeing some other video with a mention of puls where it was these english historians describing it as "a bean porridge?????" and acting like it was the craziest and grossest thing ever. it's just beans dude! clearly just people who don't know how to cook, lol.
