depends on what each individual brewer has in mind mate. it's a broad category
i just know i like sour and funky-yeasty-fruity-heady-malty. some red ales remind me of a fermenting chilli mash before it's blended into a hot sauce
let's talk about beans next. personally i am a big fan of chickpeas, borlotti beans, and unhulled lentils. not american so not as many red beans around me

I made a version of gladiator puls the other day after watching that tasting history video on the subject. It's actually really fucking good, like eating italian-flavored refried rice and beans from 2000 years ago. Only it's fava/lima beans instead of pinto beans, and barley instead of rice. But it's the same basic architecture and I can totally see how you'd fill up on that shit forever.
