I don't drink alcohol so take what I say with a grain of salt, but I never understood the point of having glasses that you can't/shouldn't fill all the way. Is there a reason for so many alcohols to not be put in glasses that you fill all the way or something

There are different shapes of glass for most types of wines and similar for different types of spirits.

You probably never grew up with savoury drinks, and so the association is weird for you. Personally, I've loved stuff like tomato juice and beef tea since I was a kid. I think everyone should try a caesar or vodka with beef stock at least once, but I can understand it's not appealing to everyone.
