Some spices do have antimicrobial properties. They're not going to unspoil rotten meat, but can make it last. Like pic related coming from indonesia and malaysia. Slow cooked beef in coconut milk and spices. Cooked right down until it's dry. It will stay good maybe 4 weeks. Important if you live in the tropics and didn't have refrigeration.
