Basically all tough plants are edible when young. Most bamboo shoots you can buy are very young ones.
Sane way we eat ferns when they are stille little fiddleheads.
If you let asparagus continue to grow it would be too tough and woody to eat too.

It's not a random bird nest. It's a special type of bird's nest that makes it out of saliva or something, that dissolves when boiled and adds no flavor at all. Somebody probably wondered what would happen if you boiled those weird looking nests.
