Malt vinegar is better than lemon, but I keep going back to red wine vinegar. It's just that fruity flavour it shares with lemon but only better because it is strong enough to stand up to the potato and seasonings. The malt vinegar has a deeper earthier flavour which does go with the potato but it is flatter than using red wine vinegar. Each to their own I guess.
