Properly caramelizing onions is not easy so if you’ve only had botched ones I don’t blame you for this misinformed opinion. Many flavors of onions have an inherent sweetness to them, especially the yellow type used with this technique. It simply brings out the essential flavor of the ingredient - as part of meat dish this is a classic flavor combination found in both western and eastern cuisine.

Most restaurants probably aren't making proper caramelized onions. It can take like an hour to do it right but a lot of places will just give the onions a quick saute and add white sugar, which doesn't taste nearly as good.

Imo it’s fine- generally not the choice i would opt for, but could be part of a good offering. I could agree it shouldn’t be the default. But just as many people find raw onions jarring enough to the point it ruins a burger, especially red onion. No onions should be standard imo in the case of burgers specifically.
