Everything I'm about to say is based on the black pudding I'm used to, and the one I'm used to isn't from England. It's not even from Europe.

The taste is about as far as you could get from what most people think it will be, which is "a mouth full of blood". It's intensely savory and meaty and spiced to be somewhat warm. It really comes down to the spice and preparation, and thus who you buy it from; go to one butcher and it might be borderline divine, but go to a different butcher and it might be pretty ghastly. Not to mention shit butchers will leave stray bits of cartilage and gristle in them, but that's a problem for all types of sausages from shit butchers here. If you don't like it at first, I do suggest giving it a couple more tries but making sure to change purveyors.

Texture is hard to describe, but when hot, saying it's like paté or a very very stiff mouse gives a rough idea, more of a spreadable texture than something with a definite bite to it. When done as is the usual here (grilled over charcoal or wood), the outer casing becomes a mix of slightly crispy and... leathery, for lack of a better term, but not in a bad way. Don't think endless chewing, it just has a quality that makes it easy to tear with your teeth but a wee clumsy to slice with a knife against a glass/smooth ceramic plate. It's ready to eat as sold (this only applies to the shit I buy as far as I know, do NOT assume this with whatever you buy and wind up scarfing down raw blood) since they're all pre-steamed, and at room temp or cold it's even firmer and looses the spreadable quality it has when hot, being something you very much slice and bite into, the casing being something you peel away in such case (unless it's been further cooked on a grill or something similar and then cooled down) because it'll be very chewy and annoying even if edible.
