I bought a 18 lb turkey when they went on sale after Christmas for $8. I’m a single dude, so I’m wondering how I could utilize this thing for meal prepping? I don’t want to waste anything. I’m open to recipes, storage options, etc. I’m planning on brining and oven roasting it.

I personally would roast it whole, eat ~1/3rd of one breast for dinner, then cut the remaining breast meat into slices for sandwiches and shit

As a single person, it's best to separate out the parts for multiple meals. Assuming it's still frozen--
Breasts are good for quick oven roasts.
Legs/thighs can be pan fried/oven finished
Wings can be smoked if you have the capacity, or tossed in with the carcass for stock which is every bit as good as chicken stock, maybe better.

you can freezer bag or vacuum seal turkey and gravy separately, thaw it later, and dine like a god with only making mashed potatoes. just warm in the gravy, super moist.

or make a pot pie. save the bones in the freezer and make stock for a soup with leftover turkey as well

Just break it down into breasts, thighs, etc and freeze them. Make stock with the carcass and freeze that, too.

Do not do this, the people suggesting this are retards. 18+ pounds of turkey foods will go bad before you eat it all, and if you do somehow manage to consume it before it goes bad then you'll be so sick of turkey you'll never want to eat it again. Don't bother freezing the meals either, it's simply better to freeze the raw meat and thaw it at your leisure.

I bought a 22lber for Thanksgiving despite everyone I love being dead. I broke it down, wings, thighs, drums, whole breast and spine. I froze everything but the back and titty. I roasted one and used the other to make stock for the gravy. I'll leave you to figure out which one went to which purpose.

Anyway, for freezing, I don't bother with zip-type bags. The seals are never a guarantee and they're too stiff to close using the twist-and-tuck method, like a bag of bread. Instead, I buy bakery bags and use those. They're like the fold-over type sandwich bags but much, much bigger. Works a treat.

I'll join the others and say to cut it up into sections and freeze them separately. Definitely get yourself a vacuum sealer if you don't already have one, btw.

One thing you can try before freezing is to apply salt before sealing them so they'll brine while thawing out.

Not at all. Squeeze every last bit of air out, make sure the bag has direct contact with what your freezing then twist and tuck shut.
I always got freezer burn using so-called "freezer bags" IE the zip-type ones so I tried this instead and it works for me. Maybe I'm suffering from storage bag retardation but I just can't figure out how in the shit I'm supposed to use zip-type bags to avoid freezer burn.
