Ricebros, we've been silent for too long. Post your favourite rice amalgamations.
I'll go first: Portuguese seafood rice. Although, I also really like paella.

I like Mexican rice. I add smoked paprika and ground coriander to it. I don't blend the onion and garlic either. I fry the onion, then add the rice and toast it, then garlic and jalapenos, the spices, fry for a few minutes, then pour over the tomatoes and stock. I usually add black beans, corn and a green capsicum too. Then I stir through lime juice and chopped coriander when serving. I have it as a main. Usually just with a couple fried eggs on top or some avocado on the side.

>chicken stock
Start by sautéing the carrots, then add your habanero. Add one cup of rinsed and strained rice when habenero becomes fragrant, and saute for a minute or 2. Add 1 3/4 cup chicken stock. Bring to boil then put heat on low for 15 minutes with lid on. Remove from heat and let sit for 10 more minutes without removing lid. Fluff rice with fork and enjoy.

Rice cooked in lobster water, salt, a shake of nutmeg or cinnamon and diced habanero

Has a nice olde world spice trade flavour and goes great with your lobster and butter sauce
