Trichinosis has been pretty much a non-issue in the US for decades now after Congress passed the Federal Swine Health Protection Act. Barely a dozen cases of trichinosis are reported every year in the US now, and all of which are attributed to eating wild game (usually boar). Pork in the US can be eaten raw or rare as long as it's handled properly.
