If I had to wager a guess, maybe 300g of dry rice per 8 peppers? I did 400 or 50g per and that was a bit much. Then again I did have 600g of minced meat, two onions, some celery and the tops of the peppers in there as well, which is more than usual I'm thinking. This is difficult.

I boil the peppers for like 6-8 minutes before stuffing them to ensure they are soft after baking. Is this a white trash method of ensuring a delicious meal? Also, I use quinoa, not rice. I bought a 25lb bag 2 years ago I'm not through yet.

OP, the rice is just a filler ingredient to make it so you don't need as much meat. its entirely up to personal preference of how much carb to meat ratio you want to use. if you really don't know, best just stick with a 50/50 ratio.
