I'm american and dislike our egg practices as well.

Room temp eggs are so much better to cook with in the morning. It's an often overlooked factor when preparing them.

I started fridging my eggs because they seemed to set better when I fried them and the yolks weren't so delicate. I buy free range now and haven't had those issues since.

Eggs in america are basically pressure washed and disinfected. This strips the natural protective coating off the egg. If you don't wash the coating off they last for a month or more at room temp.

Butter lasts for a while in a butter crock. I can keep a stick of butter at room temp in a butter crock for 2 months if I replace the water every 3 days.

The egg market in the US is so large that even with our above average food health and safety standards it's worth the effort to try and reduce the risk of salmonella.
