Assuming your gut isn't completely fucked (you'd know) you already have a gazillion strains of bacteria in it. Eating bacteria does nothing, they either die in your stomach or pass through you. Fermented foods are decent though because the byproducts of the fermentation can be good for you.

While bacteria are useless, you do want a good variety of prebiotics like fibers and complex carbs, resistant starch, etc. to feed the bacteria you already have. Too little of that and too much simple sugar/carbs and the balance can shift towards bad stuff.
Ironically a bland diet tends to be a problem since it leads to lots of sugars, simple carbs like white bread, little fiber. That's why autists have bad biomes, but anyone who eats too much fast/junk food is vulnerable

Probably isn't diet or else there'd be a lot more autoimmune patients than there actually are. Most people in developed Western nations are exposed to more or less the same foods.
In contrast being overweight is the one thing definitely caused by food (too many calories of food specifically), which is why the literal majority of the developed world is overweight.

Autoimmune diseases are genetically linked. In fact, a good chunk of them can utilize genetic testing to confirm diagnosis. In reality, more people in developed (Western) countries likely have access to better medical care, which means they get diagnosed more frequently, showing an increase in cases over time.

For example, lupus, juvenile rheumatoid arthritis and other connective tissue autoimmune diseases run in my family, but just a few generations ago you didn't know that. Uncle Ted just hurt more and had a bum knee and likely died an early death, seemingly without cause. We have the privilege to live and live longer, but that comes with the manifestation of things that could almost certainly kill us without medical intervention.

However, salt and sugar are well-understood as inflammatory agents. Eat too much of it for an extended period of time in life (and just about every single Westerner does), you will increase inflammation in your body and your nerves will be fucked. In addition, obesity wears on your joints, increasing muscle and bone degeneration, and lack of exercise exacerbates this.

Eat healthy, exercise and you'll feel much better, but it isn't going to negate a genetic disorder.
