Whenever I get a good sandwich from a deli or something there’s a shit ton of meat on it and it’s great. However, at home, I only use 4-5 slices of deli meat on my sandwich and it seems like way too much. What gives?

My general rule of thumb is 60-70% of the insides. What's important is that there isn't so much inside that there's a noticeable amount of layering in the meat by itself when you bite through it, and while the additional sauces, veges, and cheese are usually only accents, they must have enough room to be noticeable in its flavor.

Depends on what you are putting into it. I generally go with 1/2 to 2/3 of the sandwich filling's mass, as animal products. But that's cause I make many "classic" sandwiches with nothing much too interesting going on to them. From then on, there can be a good sandwich with 0% meat, but there will hardly ever be a good sandwich with just meat. Only like a steak sandwich or sth, but there are better uses for a steak.
