8 Boneless chick thighs, cup and a half of chick broth, your choice of mexican marinade. Poultry setting for 15min. Natural aspirate. Add 2 cup wild rice. 15 more min on poultry, natural aspirate. Open and shred chick. Add black beans, jalapeño, saute onion, etc. Continue to warm to temp. Makes for killer burritos.
NY style cheesecake also very easy to make in it. So is yogurt. Beef stew is a no brainer.

also get yourself a saucier with sloped sides. i have a stainless steel one i use for a ton of stuff. soups, gravy, cooking rice, pasta, sauces, etc. definitely a solid workhorse

Many months ago I was talking about cooking with my mom, at some point I mentioned to her that all I really need right now is a proper stainless steel skillet so I can make fonds, or cook stuff on the stove that can be finished it in the oven.
She got me a two set of non-stick starfrit pan / marmite, with non-removable plastic handles so it's only oven safe up to 350F. Bless her I love her with all my heart, but I can't stop finding it funny lol. I wasn't expecting any gifts in the first place and I'll never bitch about getting free pans and pots so it's totally fine.

Get a baking dish and a small baking sheet with a griddle(?) as well.
Baking dishes are super handy when you want to make some oven roasted stuff and not mess up the interior of your oven and the small baking sheets are very nice because you can use them to prepare your meat in the fridge and still have some circulation due to the griddle.
