Wait until the top of the pan is hot to the touch. Add about a tsp or so of oil (I use avacado oil) and let it heat for about a minute or less

Whip the eggs, about 1/2 to 1 tsp of liquid per egg. Water is good but I use unsweetened almond milk. Add about 1/2 to 1 tsp of butter to the pan and coat the bottom and a little up the edges.

Take them off while they are still a little slimy and they will finish cooking out of the pan and be fluffy.

Some people like cream, some people add butter just before the last stir. It was more about how to do it on stainless and not the ingredients as much. I did forget that I add a pinch of salt. I also over cook mine because I like em a little dry.

I like to let my oil heat up until thin wisps of smoke becomes visible and that's when you know it becomes non-stick. Anything before that happens your stainless steel surface is going to stick to everything.
