What I typically make to imitate/elevate instant noodle soup is sweat garlic and ginger (if I have it scallions) in oil, put in gochujang or chili flakes give it some heat then pour over water or stock, flavour with soy and oyster sauce, boil the noodles in this liquid and a minute before it’s finished add some greens, maybe an egg. Any ideas for Spicy soup recipe variations? What to add/leave out and substitute to keep it interesting and change up the flavour profile?

My favorite Asian soup is Wonton Soup. I’ve never tried to make it. It’s so easy just get a quart to go. All Chinese restaurants have it on the menu

For the one you posted I tend to use the broth in pic related top center. Cube brisket (don't buy wagyu like I did, it's a waste), blanche until water is clear, put in slow cooker/crock. Add chopped Daepa (big korean green onion) and cook. Towards end of cook in 4 hours, lightly sautee shiitakes and add in with enoki, serve over noodles. Your image had gosari but I usually omit that and add fresh (refrigerated) noodles even though it's not traditional. Maybe use korean soup soy sauce instead your normal one, or add doubanjiang or chili oil.

I should mention that it's very concentrated in the bag so I use a lot more water or stock than recommended, I like hot and spicy food but it's too much for me. You can make it with leftover shredded chicken too. Koreans sometimes serve it with purple rice on the side

Gaeng pa is one I'd recommend. I typically make it with chicken, then for the veggies I use thai eggplant, chinese eggplant, and green beans. I don't eat it with rice, though it's commonly served with rice.

Thanks, I have thought about the possibility of making it with doubanjiang which I love. Today I think I will try out a sour variety. I’ll use Sambal and add lime juice at the end (maybe cook some leaves with the soup too?) or I’ll add tamarind.

You can find it in asian supermarkets in a jar labelled "pickled galingale/galangal". The intense heat and licorice-y basil are what I enjoy about gaeng pa, anyway. The grachai just adds this earthy note, mostly...I think it's mostly used for gaeng som

You could make a trip to a big city with an Asian market and buy in bulk. Things like whole dried chilis or star anise don’t go bad for years. Same goes for all kinds of pastes if you keep them frozen or refrigerated. Ginger garlic scallions radish and broccoli should be easy to come by. Also in Italy you can get good cheap flour to make your own noodles.
