FWIW Five Guys does a grilled cheese sando with "the works" (same as the burger), which include:
>lettuce
>pickles
>grilled onions
>grilled mushrooms
>(along with mayo, 'stard, and 'chup)
and I seem to remember that being pretty tasty. Jalapeños could work very well too. The lettuce, I could take or leaf (zoz).

This thread inspired/reminded me to make a patty melt.

Most of this thread has been about cheese toasties AKA grilled cheese 'wiches, but if we're opening the floodgates, then I do like me some tuna melt. Especially with bacon, onions & black olives (not pictured).
