Just made some Egusi soup with Crabs, though I had to use Pumpkin seeds instead of Melon and Spinach instead of Bitter leaf. Any other stuff that is somewhat easy to make in Lockdown in Europe ? Preferably using things I can find in the very limited local ethnic food isle.

I've never had a good experience with Ethiopian food
I'm always down to be shown wrong, but so far they've had a bad track record
I do really like west African cuisines us off peanuts though
