couple garlic cloves
salt
black pepper corns
bay leaf
optional: sugar
1/2 vinegar
1/2 water
maybe throw a jalapeno slice or two in. go crazy, go stupid

1. fill deli container with all the onions and non water dissolvable shit.
2. boil the water and vinegar with all the shit that will dissolve.
3. pour water & vinegar & shit over onions and throw in the fridge.

it's ready "immediately" but really starts to taste good after 12-24 hrs. experiment with onion slice size. I went super thin last time and they came out super interesting.

I go immediately, some people boil the onions in the water. a method I've seen but don't do is to put everything in the containers, then pour into a pot to boil so that you know you have just the right amount.

my mom actually threw onions into cold vinegar + salt and those didn't turn out to great so I think the heat does do something important, just not sure how much is needed.
