He also tuned his format of his show to make it welcoming to youth-level cooking and the 'what and why' of the processes in making dishes. I almost want to disagree with you on this point, since I've always felt like Good Eats was one of the last good instructional cooking shows. It was kind of an end of an era sort of show, where cooking TV shifted to focus more on travelogues, competitions, and outright gameshow style content.
There's definitely still a few good instructional shows that come and go, but Good Eats is still the golden standard for balance between entertainment and education.

From Good Eats, I mainly have learned why proteins do what they do and the science behind baking which can be quite complicated. It's not so much about the recipes.
