Hoki/Blue Grenadier/Hake. I love the texture. It's cheap and tastes great, also has one of the best textures when it comes to fish. Polar opposite of mushy meat like catfish.

flash freezing or cooking to the right temp will kill them though

For me it's the humble mackerel. It's cheap, available whole, in fillets, smoked and in convenient canned form where I live.
Not a fan of the smoked ones from supermarkets as they are always really salty and dry but I've only ever eaten them whole and slapped on a plate, would probably be better flaked up and mixed in with something but I'm not sure what.

I catch and eat lots of saltwater fish and many different species have worms sometimes. I usually discard them but there is no doubt I’ve eaten wormed fish before from restaurants and stores. The worms are harmless to humans and when cooked you would never be able to tell they were there even if you tried looking. Still kinda gross to think about though.

I have a decent Salmon marinade

2 Tbsp Olive Oil
1 Tbsp Sesame Oil
4 Tbsp Soy Sauce
1 Tbsp Worcestershire sauce
2 Tbsp Lime Juice
5 Tbsp Honey (or whatever equivalent)
6 Cloves of Garlic (minced)
1/2 tsp Freshly Ground Black Pepper
2 tsp Kosher Salt
Ginger (crushed or otherwise)
Sake (to thin out the marinade)
1 Spoon of Miso Paste

dump it all in a ziploc and smush it around until it's a decent consistency, then load in the salmon and try and get it completely covered. Keep it in the fridge for at least an hour.

Tent your salmon in foil and bake it, use the extra marinade as a glaze.

salmon. its the cultural fish in the PNW. In elementary schools we'd have a bunch of fish tanks where we kept the salmon eggs and then once they're born they're taken to the ocean I guess. Really do love it just in all forms. Smoked, canned, grilled, stove top, raw. They even have this thing called salmon candy (basically sweetened jerky) good stuff.

All the swordfish I've had was kind of tangy. The taste was really good but the meat was a bit dry and required a lot of chewing. It's been a few years since I've had it, might just have been unlucky.

Other than that I'd say raw herring or smoked eel
