OP here, I'm actually drinking sidecars with Hennessy VS tonight.

Recipe:
5 parts Hennessy
2 parts Cointreau
2 parts fresh squeezed lemon juice

I'm almost out of Hennessy VS, but I will switch to 1738 sidecars if I run out.

Finished my bottle of Hennie XO about a month ago and cannot justify buying another one just yet but I'll probably cave in and get one early next year.

The funny thing about XO is the taste didn't stand out as being particularly special on my first sip, but it works really well over a long drinking session and goes exceptionally well with weed if you feel like getting crossfaded.
Those hippy-hoppy rap negroes certainly know how to entertain themselves with liquor.

My best Hennessy story. I was working in a shitty dive bar in Portland. Yes, I know, the average anon thinks all of Portland is fucked-up hipsters, antifa, and retards, but it was a blue-collar city for a long time with neighborhoods to match. Was working in a dive bar in North Portland and among the nigger gangbangers and the wiggers who worshiped them, the Henny and Coke was a very popular drink. One day, this wigger comes up and orders one. Unfortunately we were out of Hennessy. I offered him Courvoisier, but he flipped his lid. Told him to come near and said, "YOU'RE DRINKING IT WITH FUCKING COKE." Was like, "Ya man, whatever. Give me that."

Well mostly because it's AOC and is more a declaration of quality and origin. It has to go through many critical criteria within the cognac category as well as also being made in that region of France from those particular grapes. Feen is an even more specific category requiring a blend of no less than 51% Grand champagne grapes, the remaining would be a blend of petite champagne or borderies of fins bois or lower forest area - the more expensive the grapes, like grand champagne or petite are grown in the same clays that the grapes in the champagne region have in the northeast of France, so the quality is better but also more expensive because that area that they can grow is very, very small compared to say fins bois or bons bois regions.

Hennesy is well-marketed cognac but I don't think they're the world best anymore - though most popular still - if only through being accessible. They have no distillery personally, outsourcing their production to other cognac houses and providing them with the specific blend specifications they want them to make and then once that cognac is made, that is given back to the master blenders at Hennesy who then finish the production.

Other cognac houses blend their own cognacs though and I value this cognac over Hennesy who simply outsource it without making it themselves.

tldr; The main reason it's special is because of the really specific regulations - it's the same as anything that is controlled for the quality of that product whether it is Bottled in Bond, Straight Bourbon, Rhum Agricole AOC, Feen Cognac or London dry. it's these designations of quality that means that the consumer is getting what they pay for - it's being built to preserve that traditions and culture or style of bottling.
