not bad, op. consider cooking out some tomato paste with different spices and mix in fresh herbs when everything else has been done and said. i would suggest a blend of marjorum, parsley and sage. If you ever feel like a meal is too heavy/oily the addition of herbs and acids can turn it into something lighter and much more palatable. makes it smell fancier as well..
when youre cooking with spices toast them in a pan on a medium heat to release the spices' oils. dry in a warm pan or in oil/fat at a low temperature. it is a short process and you'll be able to tell when you burn it pretty quickly.
when you're cooking with herbs add it in the end unless the recipe calls for it otherwise, and always try to use fresh over dried. They're good freshly torn by hand or cut with proper technique but please don't let it juice your cutting board from poor knife skills. Would you rather eat steak or jerky? same difference here.
With acids be careful as they not only add moisture but salinity to your cooking, adjust your recipe accordingly. lemon and lime are pretty safe compared to your variety in vinegars.
Balance moisture and texture first, seasoning is fine tuned at the end almost always.
When it comes to seasoning you can always add but never take away.
