Making black beans and rice with Spanish pork chops for dinner. Got them fresh cut they're super nice.
Just a little sazón and adobo for the pork and you let it sit for a few hours to over night.
Add a splash of cchicken stock Bake them on 275 for like 3 hours last hour uncovered. I threw some onions in mine for a little extra flavor.
As far as the rice goes:
Chop an onion and sautee in butter until it's soft. About 10 minutes. Add 2 cups of rice, 2 packets of sazon seasoning and a tablespoon of adobo. Add 4 cups of water and a can of rinsed black beans. Stir. Once it starts to bubble, but not a rolling boil, turn down to a simmer and cover and cook for 20 minutes.

I usually do this with a pork butt, but tonight the wife and I are just having dinner ourselves.

It really only matters if you're re-heating the rice. Other than that it is very good. It adds more flavor if you don't rinse the beans but it's bean flavor so keep that in mind.

Ooh I'll have to try that next time I don't have any right now.
I had to up the temp a little bit to 300 wife is coming home earlier than expected.

Also I baked it covered on 300 for 1 and a half hours. I drained the juice and saved it for the rice water. Basted it and put it back in on 350 with no foil for 50 minutes.
