When we processed our deer we always let them hang for a couple days before butchering them. Grandfather was old old school hunter who did it most of his life to provide all the meat he ate, said it reduced the gamey taste in the meat. The roasts from the our deer tasted like roast beef, would feed it to my sisters and they had no idea they were not eating roast beef.
