I bought a small drug scale. The kind cokeheads use. Head shops sell them but so does Amazon. Works great for salts when doing canning or curing. Always worried a SWAT team is going to rope in, flashbang my kids, and shoot my dogs while I lay prone on the floor trying to explain that the scale really IS for making pastrami and pickles.

the fast and accurate ones are more expensive.
thermoworks is the gold standard for thermometers. the Thermapen® ONE is like $100 and reads in 1 second, and is as accurate as anything.
They also have a $35 ThermoPop® which reads in 3-4 seconds which is probably about as accurate.

The Mk4 is frequently on sale for ~$70-80. Results in around 2 seconds so it is very quick.

$20-30 from any manufacturer you should expect to be reasonably accurate but slow to plateau on the temperature reading.
