I try not to be a whiney bitch about my mental situation but at this point I struggle to eat more than 800 calories a day and it is making me miserable. What are some nice low effort meals that I can force myself to make which are not entirely unpleasant? I'm not an entirely novice cook but it is hard to find inspiration to make something, to the point where I am mostly eating toast and cereal everyday.

Baking meat and vegetables is super simple and mostly a matter of keeping track of time. Also make yourself a heavily peppered 3-egg cheese omelette or cheesy scramble

love food, like cooking, severely depressed and can’t be fucked to cook/eat

honestly hard for anyone to tell you what you would be motivated to cook, depends largely on what food/cuisines you love to eat. find something relatively simple you wanna cook and just focus on making that, once. don’t worry about making a routine out of it to begin with: any bowl of cereal or whatever replaced by a homecooked meal is a net positive. cooking is a lot more enjoyable, aka easier, if it doesn’t feel compulsory.

if u need a suggestion carbonara is easy as piss to make and pretty tasty.
fuck what the italospics say you don’t need guanciale/pancetta, just sub bacon (unless your store has it ofc).

1:1 egg yolk/whole cream

boil pasta, fry pork, set pork aside on paper towel. pan off heat. noodles in pan, quick toss in fat (remove some from pan if too much), add bacon, sauce. mix. residual heat is enough to cook sauce. add parm, salt, pepper. mix again. plate and add parm to taste.
