What is generally considered "southern" US food is not cuisine, it's just good eating. There is nothing pretty or healthy about it and that's what makes it a delight. Are collards good for you by themselves? Sure. Once they are cooked up in the fat of bacon/fatback/jowls with a side of corn bread? Not so much. But fuck me running if it isn't good.

I think it's safe to say that in the common vernacular "cuisine" infers a higher quality of product than what most sourthern food is. Especially considering how many of the dishes are based on and designed around poorer cuts of meat. After all, you wouldn't call fast food cuisine either but it falls under the definition.

Favorites were probably crawdad/redfish poboy, red beans & rice, jambalaya, and some gourmet chicken & waffes I had at an upscale restaurant in Louisiana. Marietta's pretty big, at least the zip codes are. La Parilla mexican is really good. Tofu Village is decent Korean and Il Mee is a real hole in the wall Korean that I like. Aspens is kinda nice for normal steak and starch with a dated menu, but decent. Unfortunately I know more places to avoid than places to go to.
