Salt seemed fine to me, but it's going to vary depending upon your taste and what brand of bouillon you use. My sense for salt may be fucked from my dieting and having to supplement salt to replenish my electrolytes.

>1lb ground beef, 80/20
>sub with half beef half lamb if available
>1 grated medium onion, juice squeezed out by hand in bowl or with a sieve
>Salt, pepper, garlic or garlic powder, optional sumac and chili flakes
>Knead in a large bowl for 5+ minutes like dough, must become almost a paste that is hard to pull pieces off of. Fat and beef very well combined.
>Form into large balls or cylinders
>Refrigerate until ready to cook
>Slide cylinders onto 1" skewers, pinch them up and down using hand. Dip hand in reserved onion juice or cold water so it doesn't stick. Pinch off ends of kabob so it stick to skewer
>Grill over direct charcoals, 10 to 11 minutes. Gently turn over every 30 seconds exactly
>Secret that every youtube cook won't tell you: Grind saffron in small bowl beforehand, put few tbsp butter in it and melt. Then brush over finished kabob and a little rice. Can sprinkle additional sumac if necessary. Do NOT add bullshit like baking soda, an egg, or breadcrumbs to help it stick to the skewer; that's cheating and it's cowardly. Accept the fact that you may lose some to the fire gods.

Glad to hear it, final tip is only start putting them on skewers after you start heating up grill. You want them to stay cold before being cooked because the fat could melt if you leave them sitting out too long.

You're trying to get the onion pulp as dry as you can by squeezing out the liquid. Any extra moisture in the meat will cause it to fall off the skewer. So you grate an onion over a plate or bowl, then press down on the grated pieces with your hand to discard the juice in the sink, keeping the pump. You can also squeeze out more if you put the onion pieces in a sieve/strainer and squeeze it out that way. Once you have dry-ish onion pulp, you add that to your meat and spices and start kneading with hands/ fists.

as you can tell, I'm very skilled at MS paint. You might want to look at videos for koobideh or Luleh kebab on youtube for the technique of getting in on a skewer. And use a grill grate in case one falls off, you can eat it as a failed hamburger.

1 onion
1 bell pepper
3 to 5 cloves of garlic depending on size
1 lb ground beef
10 manzanilla olives and a small amount of brine
1 tbs tomato paste
1 small can of tomato sauce
2 tbs raisins
Salt and pepper to taste
Dash of hot sauce

Chop veggies and sauté them until softened, add ground beef, breaking it up as it cooks. Once browned add olives, brine, raisins, and tomato paste. Cook for a few minutes and then add sauce and cook until sauce has reduced, then turn off the heat and add a few dashes of Tabasco sauce.

It would need to be much less meat on each skewer, it's supposed to be flat wide skewers. However, go to google images and search for "Kofta kebab," those turkish ones are very similar but I don't know how it wouldn't fall off unless you did it in a pan/griddle instead of grill. >add beef and break it up a bit

>chop up Thai basil (or don't, but not as good)
>useful to layer leaves on top of each other, roll tight, then cut into ribbons
>when most of the water is evaporated throw in basil to meat
>stir
>if you wanna have an egg push the meat to the sides and fry it in the middle (oil should pool there)
>cook sunny side up with crispy sides
>throw egg on rice

I normally do between 1/3 and 1/2 cup of (uncooked) rice, and the amount of meat is maybe 250 or 300 g, I dunno. Goes well with cucumber -- cleans your teeth of the oil and gives you something to chew on.
