Genuine question, what vegetables are actually good to put in a burger? Lettuce reduces friction and makes the contents of the sandwich slide around too much, tomato is too detrimental to texture, etc. What's actually good? Besides onion, of course, but even that's only really good if diced.

Pickles, obviously. Also I often substitute lettuce&mayo with coleslaw, that holds together pretty well since the cabbage is held together by the dressing. On that note, sauerkraut and kimchi also work well in burgers. Overall, pickled veggies seem like the best fit for a burger, at least in my opinion.

For me, i only like raw onion and pickles on a burger. Tomato slice is too wet, it makes it soggy. Lettuce is okay when it's shredded, but whole leaf is a no go, I always pull the whole thing off in one go and it makes the burger unstable. Same with grilled onions, they're slimy and cause the burger to slip around.

You can use whole leaves of lettuce to hold the other veggies in place kinda like pic related. Wrapped between leaves of lettuce and the bottom bun, it doesn't matter what you put in between. It'll hold fast.
