Common practice for slaughtering bird is to grab them, quickly invert them, and place them neck first into what we here call a "murdercone": a restraining device that can be substituted with a modified traffic cone. The flipping disorients them, putting them into a stupor and the cone restrains them while leaving their neck exposed for your axe/cleaver/knife. I pluck the heads and do a variety of things with them, still looking for the perfect duck head recipie. In the meantime I will dry them, coat them in some oil/lard, roast them at a high heat for a short period of time untill they start to turn golden and crispy, then I put them in a pot with either just straight water or homemade vegetable broth with vegetables like carrot, onion, and celery, and slow cook until all the collagen leeches from the head into the soup. Then I try to figure out what to do with the head, I'm thinking bread and fry it this time. Brain taste varies from duck to duck, I have no idea why. The only part of the duck that is composted/discarded are the intestines/vent, some of the feathers (I keep whatever down I can dry pluck and the largest pinfeathers), blood, and twice stewed bones.

When I small and living in the countryside, I got to watch my relatives slit chicken and duck multiple times, up close and personal. No cone, no monkey apparatus shit, they just straight up slit them with a knife. They would pluck the feather where the cut is made, flick it once or twice to warm it up and then collect the it in a small bowl. The main reason I don't consume the blood is simply because the birds just don't bleed enough to collect and store a significant amount. I also decapitate, not exsanguinate, which causes the blood to spurt out instead of flowing down . When I slaughter a large animal like a hog I will definitely collect and consume the blood.

Ducks don't pluck as easily as a chicken. The trick is to use water thats 160 degrees and a bit of dish soap, then you put the carcass in for 90 seconds, sloshing around to make sure the soap breaks down the natural oils in the feathers. I will also dry pluck the breasts a bit to save the down, but not too much as the plucking can damage the skin. You also need patience. I don't own a plucking machine so I make more work for myself, but I am very meticulous about removing all the feathers. Pic rel
