Keep bread in the freezer it stays good for weeks. Presliced bread you can just take the slices you want, for a loaf make sure you slice it up yourself first and take it out half an hour before you need it.

It's better in the freezer, if sliced so you can pull it out frozen t the toaster defrost setting, but if you're going to toast it and don't mind if it's dry then you, yes, can just keep it in the fridge and it's pretty decent for under a week.

A nut-filled grainy bread like Dave's will hold onto it's own moisture in the crumb pretty nicely too, same with bagels which are very dense.

Breads need to be in a dry place with good airflow in order to prevent molding. The problem is this strategy speeds up staling, so you need a middle ground when you're dealing with homemade bread. A breadbox is the best answer.

My sourdough goes moldy faster in the winter when it's cold inside. I store it in plastic after 24 h. I estimate this is because the lactic acid bacteria acidify the bread more effectively when it's warm, which preserves it. Sourdough undergoes a secondary lactic-acid fermentation after it's baked, with the flavor starting to change typically around day 4-7.
