salt sure is required in the most foods of all ingredients, but it is primarily serving one purpose so i would not call it versatile. maybe most essential, but not versatile.

milk is a strong contender, especially through butter and cheese

lard, tallow and duckfat i would say fall short in their ability as standalone components. i would nominate them for the essential category but versatility i think would go to either eggs of milk
