I just deep-fried a 17 lb turkey. I followed the general guidelines of 3 minutes per pound at 325 - 350° F, so 51 minutes total plus a few more to get it back up to temp after I put it in the oil. Unfortunately it came out totally overdone with like 205° internal temp. I wanted to cry

Frozen turkey. That is what causes explosions when you fry. Defrost your turkey properly (even "fresh" ones are previously frozen).
